Breakfast Quiche

Postby Tim on Sun Oct 19, 2003 4:07 pm

Here is something I love for breaqkfast. Take 2-4 oz. some type of meat, doesn't matter. Chop up. I use turkey ham (not because it's low fat, but becauwse its cheap and I like the taste), or sometimes nuke up a frozen turkey burger and crumble it up. Place in microwqaveable tupperware. Put in frozen veg of your choice, my preference being a combination of chopped spinach and chopped broccolli. Nuke until cooked and heated throughout. Add two eggs or the equivalent in egg sub, season to taste, mix thoroughly and nuke in microwave until fairly solid (in my microwave, thats two minutes. Very filling, yet still very low carb.

When adding the eggs, also add 1/2 ounce cheese of your choice. My favorite is feta, a little bit goes a long way and it gives it a distinctive flavor
