I find that cooking 2 or 3 lbs of bacon at a time and storing it in a ziplock bag in the fridge works well. In the morning I fry or scamble an egg and heat a piece of bacon up in the microwave for 5-10 secs(no longer or the bacon will burn)and it tasted like it was just cooked. This is really quick and has no carbs. It works well with sausage links, patties, chicken breast cubed or any meat I want to add to a meal and make the prep time way less.
Also, We like to eat crustless pizza that is really quick. I get a ham that is pre sliced (ex.kentucky legend from walmart or kroger) and I put one piece on a plate, top it with a 1 tbs of pizza sauce(walmart brand is low in carbs but check the labels) then I put cheese and topping on it and microwave it for about 4 min.(all cheese melted) I use a small pizza cutter to cut it int small squares and presto quick meal. I freeze the remaining ham one piece in it's own ziplock and it works just as well.
another quick meal is chili dogs
2Hot dogs with walmart brand chilli sauce and shredded cheese and onions heated in the microwave is a perfect after church and my family loves it.(be careful what kind of chilli sauce you get. canned chilli has many carbs but chili sauce has no beans in it, but again read the labels.)
I have found that coating chicken breast in seasoned fish fry mix or another fry mix (read the labels ) and frying it really tasted like fried chicken. I put in 1 or 2 tbs of the mix in a ziplock bag and shake it up and fry it. 2 tbs of mix has 11 carbs total(according to my bags label) then divide it by 4 pieces of chicken mean less that 3 carbs per piece. I serve this with grean beans and cole slaw and it is great. I put 2-3 heaping tbls of mayonnaise or so in a bowl then mix in some splenda(2-3tsp) and red wine vinigar(couple of dashes), onion powder and pepper till I think it tastes right and mix it in to the slaw. Try it if you like slaw. and hardly no carbs.
turkey rolled up in a piece of lettuce with chip dip or anything like that in the middle is really easy to take in a packed lunch. Celery with onion cream cheese too.
