Ingredients:
- 4 pkgs Knox
unflavored gelatin (1 oz total)
- 3 egg whites
- 5 T of powdered
sweetener
- 3/4 cup of boiling
water
- 1/4 cup of cold
water
- 2 t of vanilla
extract

Directions:
-
Sprinkle the
gelatin in to the cold water and leave for 4 or 5
minutes.

Then combine
it with the boiling water in a saucepan, heat & stir
until dissolved.

Once
dissolved remove it from the heat and cool to a syrupy
consistency.

Add the
vanilla and the sweetener, stir well.

Whisk the
egg whites until they form soft peaks and very slowly
add the cooled gelatin mixture, whisking continuously.

After all
the gelatin mixture is added, whisk for a further 2 to 3
minutes until the mallow mixture is very fluffy.

Pour the
mixture in to a greased shallow dish, allow to set, cut
in to bite sized pieces.
